Instructions

  1. The eggs and sugar turn pale and thick as they are beaten together. The flour mixture folds in gently and the batter changes from glossy yellow to soft and airy with a few uneven streaks before smoothing out.
  2. The batter spreads into the cake pan and bakes into a soft golden sponge. The top looks lightly browned with small uneven bubbles and the edges pull slightly from the pan.
