Description

This Rhubarb Cake is an easy and quick and simple dessert packed with fresh flavors and the best soft texture and healthy fruit balance. It is perfect for weeknight dessert and brunch gatherings and potluck events and holiday tables. These ideas bring a comforting homemade treat that feels both light and satisfying and works for casual snacks or special occasions.

Ingredients

Scale
  • 2 cups chopped fresh rhubarb
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup butter melted
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. I combine the eggs and sugar and melted butter and milk and I whisk until the mixture looks smooth and slightly thick and glossy which tells me the base is ready for the dry ingredients.
  2. I add the flour and baking powder and salt and I fold everything together until the batter becomes thicker and slightly lumpy which shows the flour has been absorbed.
  3. I gently fold the chopped rhubarb into the batter and I make sure the pink pieces are scattered unevenly so every slice has bursts of tart flavor.
  4. I pour the batter into the pan and I bake until the top rises and turns golden and slightly cracked and the rhubarb softens inside creating a tender texture.
  5. I let the cake cool slightly and I cut into it to reveal the soft inside with juicy rhubarb pockets and I serve a slice that looks rustic and homemade.

Notes

Pro Tips:

  • Use fresh rhubarb for best flavor and natural moisture. Frozen works too but drain excess liquid before adding.
  • Do not overmix the batter because it can make the cake dense. Keep the texture light by folding gently.
  • Sprinkle extra sugar on top before baking for a slightly crisp crust. It adds a nice contrast to the soft interior.
  • Let the cake rest before slicing so the structure sets properly. This helps keep each slice intact and moist.

Storage: Store the cake in an airtight container at room temperature for up to two days and it will stay soft and flavorful. For longer storage and keep it in the refrigerator and bring to room temperature before serving to restore its texture.
