Ingredients
- 3 medium Fresh peaches
- 1/3 cup finely diced Red onion
- 1 cup Fresh corn kernels

- 2 tablespoons Lime juice
- 1 teaspoon Honey
- 1/2 teaspoon Fine sea salt
- 4 cups Tortilla chips
Instructions
- Cut the peaches into uneven small pieces so some chunks look soft and juicy while a few edges stay firm. Add the diced red onion beside the peaches so the colors stay separate at first and the bowl already shows a bright peach and purple contrast.
- Cook the corn and jalapeno until the corn turns golden in scattered spots and the jalapeno skin wrinkles in dark patches. The ingredients should look shifted and slightly toasted with some kernels browned more than others for a homemade look.
- Move the charred corn into the peaches and add chopped jalapeno and cilantro and lime juice and honey and salt. Fold everything until the peaches turn glossy and the corn and herbs are partially mixed through the bowl with a few bright pieces still sitting on top.
