Description

Peach Bruschetta is an easy and quick appetizer with juicy peaches and creamy cheese and toasted bread. This simple recipe is one of the best healthy ideas for brunch and party boards and potluck trays and holiday snacking. It also works for meal prep when the topping is stored separately and spooned over warm crisp bread before serving.

  • 1 medium baguette cut into 12 slices Baguette
  • 3 medium peaches diced small Fresh peaches
  • 3/4 cup Ricotta cheese
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 2 tablespoons Balsamic glaze
  • 1/4 cup torn leaves Fresh basil
  • 1 tablespoon Lemon juice
  • 1/4 teaspoon Kosher salt
  • 1/8 teaspoon Black pepper


Instructions

  1. Cut the baguette into 12 uneven slices and brush them lightly with olive oil. Toast the slices until the edges turn golden and the centers look crisp with a few pale spots still showing.
  2. Add the diced peaches with honey and lemon juice and salt and black pepper. The peach pieces turn glossy and lightly coated with a little juice collecting at the bottom while the fruit stays chunky.
  3. Spoon ricotta over each toasted baguette slice and drag it loosely across the bread. The creamy layer looks uneven with thicker edges and thin patches so the toasted surface still peeks through in places.
  4. Spoon the glossy peaches over the ricotta and let a few pieces slide toward the edges. The topping becomes layered with creamy white cheese underneath and orange peach pieces sitting in uneven piles.
  5. Scatter torn basil over the peach topping and drizzle balsamic glaze in thin uneven ribbons. The finished Peach Bruschetta looks colorful and glossy with crisp browned bread and creamy ricotta and juicy fruit in every bite.
