  • 2 cups chicken breast diced
  • 1 cup long grain rice
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots shredded
  • 1 cup green peas
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley chopped


Instructions

  1. Heat 2 tbsp olive oil in a large pot over medium heat then sauté 1 chopped onion for 3 to 4 minutes until soft then add 2 cloves garlic and cook 1 minute
  2. Add 2 cups diced chicken then season with 1 tsp salt 1/2 tsp pepper and 1 tsp Italian seasoning cook for 5 minutes until lightly browned
  3. Stir in 1 cup rice and cook for 1 minute to coat grains with flavor
  4. Pour in 2 cups chicken broth then bring to a gentle simmer
  5. Cover and cook on low heat for 15 minutes without stirring so rice absorbs liquid evenly
  6. Add 1 cup carrots and 1 cup peas then cover again and cook 5 more minutes until vegetables are tender
  7. Remove from heat fluff with fork then stir in 2 tbsp parsley and serve warm

Notes
