Instructions

  1. In a mixing bowl whisk together 1 cup all purpose flour 1 tablespoon sugar 1 teaspoon baking powder and 1/4 teaspoon salt until evenly combined.
  2. In another bowl whisk together 1 cup milk 1 large egg 2 tablespoons melted butter and 1 teaspoon vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and gently whisk until a smooth batter forms. Do not overmix because a few small lumps are acceptable.
  4. Let the batter rest for about 5 minutes so the flour absorbs the liquid and improves texture.
  5. Heat a nonstick skillet over medium heat and lightly grease it with butter or oil.
  6. Pour about 1/4 cup batter into the skillet for each pancake and cook for 2 to 3 minutes until bubbles appear on the surface.
  7. Flip the pancake and cook the second side for another 1 to 2 minutes until golden brown.
