Description

This Fresh Peach Cake is an easy and quick dessert packed with simple ingredients and the best juicy peach flavor. It is a healthy inspired treat that works for brunch or holiday gatherings or potluck or party. The soft cake base and fresh fruit topping make it one of the best ideas for meal prep desserts or a quick sweet bite during a busy weeknight.

Ingredients

Scale
  • 3 cups sliced fresh peaches
  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup butter melted
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. The flour sugar eggs milk and melted butter combine into a thick batter and the texture changes from separate dry and wet ingredients into a smooth slightly lumpy mixture and the color becomes pale and creamy.
  2. Fresh peach slices are added into the batter and they scatter unevenly and partially sink so the mixture shows chunks of fruit throughout and the texture becomes thicker with visible fruit pieces.
  3. The batter is poured into a cake pan and spreads unevenly with peach pieces visible on top and some partially submerged creating a textured surface before baking.
  4. The cake bakes and rises so the batter transforms into a firm structure with a golden top and peach slices become softer and slightly caramelized while edges turn lightly browned.

Notes

Pro Tips:

  • Use ripe peaches for the best natural sweetness and soft texture.
  • Do not overmix the batter as this can make the cake dense instead of soft.
  • Let the cake cool slightly before slicing so it holds its shape better.
  • Add a light sprinkle of sugar on top before baking for a crisp golden finish.

Storage: Store the Fresh Peach Cake in an airtight container at room temperature for up to two days and for longer storage place it in the refrigerator where it can stay fresh for up to four days and make sure to cover it well to prevent drying and when ready to serve you can bring it back to room temperature for the best texture and flavor.
