  • 6 bone in skinless chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 ounces mushrooms sliced
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Pat 6 chicken thighs dry and season with 1 teaspoon salt and 1/2 teaspoon black pepper. Heat 1 tablespoon olive oil in a large skillet over medium high heat and sear chicken 5 to 7 minutes per side until golden. Remove and set aside.
  2. Add 2 tablespoons butter to the skillet. Stir in 8 ounces sliced mushrooms and cook 5 to 6 minutes until browned. Add 4 cloves minced garlic and cook 30 seconds.
  3. Pour in 1 cup chicken broth scraping browned bits. Simmer 3 to 4 minutes. Stir in 1 cup heavy cream and 1 teaspoon Italian seasoning and cook until slightly thickened.
  4. Return chicken to the skillet spoon sauce over top and simmer 10 to 15 minutes until fully cooked and sauce thickens. Garnish with 2 tablespoons chopped parsley before serving.
