Description

This Chicken Enchilada Soup is an easy answer when you want bold comfort food without a long cooking project. Tender chicken and black beans and corn simmer in a rich enchilada broth while cream cheese adds a smooth finish. It is quick enough for a weeknight dinner and simple enough for meal prep and it is one of the best healthy ideas for a cozy family meal. Add your favorite toppings at the table for a relaxed dinner everyone can customize with ease.

  • 2 medium breasts Boneless skinless chicken breasts
  • 1 tablespoon Olive oil
  • 1 medium diced Yellow onion
  • 1 medium diced Red bell pepper
  • 3 cloves minced Garlic
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 2 cups Red enchilada sauce
  • 3 cups Chicken broth
  • 1 can or 15 ounces drained and rinsed Black beans
  • 1 cup Corn kernels
  • 4 ounces softened Cream cheese
  • 1 cup divided Shredded cheddar cheese
  • 1 medium diced Avocado
  • 2 tablespoons chopped Fresh cilantro
  • 1 medium cut into 4 wedges Lime


Instructions

  1. Cook the diced onion and red bell pepper with the olive oil until the pieces lose their raw firmness and become glossy with lightly softened edges. Stir in the minced garlic and cumin and chili powder so the vegetables become unevenly coated with the warm spices and the mixture changes from bright raw colors to a softer seasoned base.
  2. Pour the red enchilada sauce and chicken broth over the seasoned vegetables and place exactly 2 chicken breasts into the liquid so part of each breast remains visible before simmering. As the mixture cooks the broth becomes deeper red and the chicken changes from raw pink to opaque white while the softened vegetables drift into new positions around the breasts.
  3. Break the 2 fully cooked chicken breasts into irregular shreds and return all of the chicken to the red broth. Add the black beans and corn so the soup changes from a smooth broth into a chunky mixture with visible contrasting colors. Stir everything together until the chicken strands shift through the pot and the beans and corn become casually distributed instead of sitting in separate areas.
  4. Add the softened cream cheese and half of the shredded cheddar to the hot soup and fold them through until the white streaks gradually disappear into the red broth. The soup should visibly change into a thicker creamy brick red mixture with small uneven pockets of melted cheese and softened ingredients throughout.
  5. Scoop one portion of the fully cooked soup into a serving bowl so shredded chicken and black beans and corn remain visible above the thick creamy broth. Scatter some of the remaining cheddar and diced avocado and cilantro unevenly over the serving and add 1 lime wedge at the edge so the finished bowl has melting cheese and fresh contrasting textures.
