  • 4 chicken breasts
  • 4 slices ham
  • 4 slices Swiss cheese
  • 1 cup breadcrumbs
  • 1/2 cup all purpose flour
  • 2 eggs beaten
  • 2 tbsp butter
  • 1 1/2 cups milk or cream
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley


Instructions

  1. Preheat oven to 375°F. Place each chicken breast between plastic wrap and pound to about 1/4 inch thickness using a meat mallet.
  2. Place one slice of ham and one slice of Swiss cheese on each chicken breast. Roll tightly and secure with toothpicks.
  3. Prepare three bowls. Add 1/2 cup flour in the first bowl. Add 2 beaten eggs in the second bowl. Add 1 cup breadcrumbs in the third bowl.
  4. Coat each rolled chicken in flour then dip into egg mixture then roll in breadcrumbs making sure it is fully coated.
  5. Heat a skillet with 1 tbsp oil over medium heat and cook the chicken rolls for about 3 to 4 minutes per side until golden brown.
  6. Transfer the chicken to a baking dish and bake for 15 to 20 minutes or until the internal temperature reaches 165°F.
  7. In a saucepan melt 2 tbsp butter over medium heat then whisk in 2 tbsp flour and cook for 1 minute.
  8. Slowly whisk in 1 1/2 cups milk or cream stirring constantly until the sauce thickens about 3 to 4 minutes.
  9. Add garlic powder salt and pepper and continue whisking until smooth. Tip stir constantly to avoid lumps.
  10. Remove toothpicks from chicken slice slightly and serve topped with the creamy sauce and fresh parsley.
