Ingredients

  • 1 lb shrimp peeled and deveined
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • ½ cup sun dried tomatoes chopped
  • 1½ cups heavy cream
  • 1 cup grated parmesan cheese
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes optional
  • Fresh basil


Instructions

  1. Cook 12 oz penne pasta in salted water until al dente then drain and reserve ½ cup pasta water.
  2. Sauté 1 lb shrimp in 2 tbsp olive oil and 2 tbsp butter for 1 to 2 minutes per side then remove.
  3. Cook 4 cloves minced garlic and ½ cup sun dried tomatoes in the same skillet.
  4. Add 1½ cups heavy cream Italian seasoning salt and pepper then simmer gently.
  5. Stir in 2 cups spinach and 1 cup parmesan cheese until smooth.
  6. Return shrimp and pasta to skillet tossing to coat and add pasta water as needed Tips include avoiding overcooking shrimp and loosening sauce with pasta water.
