- 1 lb shrimp peeled and deveined
- 12 oz penne pasta
- 2 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic minced
- ½ cup sun dried tomatoes chopped
- 1½ cups heavy cream
- 1 cup grated parmesan cheese
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- Salt to taste
- Black pepper to taste
- Red pepper flakes optional
- Fresh basil
Instructions
- Cook 12 oz penne pasta in salted water until al dente then drain and reserve ½ cup pasta water.
- Sauté 1 lb shrimp in 2 tbsp olive oil and 2 tbsp butter for 1 to 2 minutes per side then remove.
- Cook 4 cloves minced garlic and ½ cup sun dried tomatoes in the same skillet.
- Add 1½ cups heavy cream Italian seasoning salt and pepper then simmer gently.
- Stir in 2 cups spinach and 1 cup parmesan cheese until smooth.
