Ingredients

  • 12 oz spaghetti
  • 2 medium zucchinis sliced
  • 3 cups fresh tomatoes chopped
  • 3 cloves garlic minced
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil chopped
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Cook spaghetti in salted boiling water until al dente, drain and reserve some pasta water.
  2. Heat olive oil in a skillet; add garlic and cook until fragrant.
  3. Add zucchini slices and cook until tender but slightly crisp.
  4. Add tomatoes; cook until they break down into a sauce. Season with salt and pepper.
  5. Add spaghetti and toss, using pasta water to adjust sauce consistency.
  6. Stir in most basil leaves, reserving some for garnish.
  7. Serve topped with Parmesan and extra basil leaves.
