  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 green onions chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 cup pineapple chunks
  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water


Instructions

  1. Preheat oven to 400°F. Mix ground chicken breadcrumbs egg Parmesan garlic green onions salt and pepper. Roll into meatballs and place on parchment lined baking sheet. Tip Mix gently for tender meatballs.
  2. Bake meatballs for 18 to 20 minutes until cooked through and lightly golden.
  3. In a skillet add bell peppers pineapple ketchup rice vinegar soy sauce and brown sugar. Simmer for 5 minutes.
  4. Stir in cornstarch slurry and cook until sauce thickens. Tip Stir constantly for smooth sauce.
  5. Add meatballs to sauce and simmer 5 minutes until coated. Tip Add splash of water if sauce thickens too much.
