  • 1 tablespoon cornstarch

  • 1 egg, beaten
  • 1 tablespoon coarse sugar


Instructions

  1. In a food processor combine 1 1/4 cups flour, 2 tablespoons sugar, and 1/4 teaspoon salt. Add 1/2 cup cold cubed butter and pulse until coarse crumbs form.
  2. Add 3 to 4 tablespoons ice water gradually while pulsing just until the dough comes together. Shape into a disk, wrap, and chill for 30 minutes.
  3. In a bowl mix 2 cups sliced strawberries with 1/4 cup sugar, 1 tablespoon cornstarch, and 1 teaspoon lemon zest. Let sit for 10 minutes.
  4. Roll chilled dough into a 12 inch circle on parchment paper. Transfer to a baking sheet.
  5. Spoon strawberry mixture into the center leaving a 2 inch border. Fold edges over filling, brush with beaten egg, and sprinkle with coarse sugar.
  6. Bake at 375°F for 35 to 40 minutes until crust is golden and filling is bubbling. Cool slightly before slicing and serving.
