- 20 jumbo pasta shells
- 15 oz ricotta cheese
- 2 cups fresh spinach chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic minced
- 2 cups marinara sauce
- 1 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 1 tsp Italian seasoning
Instructions
- Boil the jumbo shells in salted water for 9 to 10 minutes until just tender then drain and cool Tips do not overcook or they will tear when filling
- Heat olive oil in a skillet add garlic and spinach and cook for 2 to 3 minutes until wilted then squeeze out excess moisture
- In a bowl mix ricotta egg Parmesan salt pepper and Italian seasoning until smooth then fold in spinach evenly
- Spread 1 cup marinara sauce over the bottom of a baking dish to prevent sticking
- Fill each shell with about 2 tablespoons of ricotta mixture and arrange them open side up
