  • 2 lb boneless skinless chicken breasts
  • 1 cup diced green chiles
  • 1 cup chicken broth
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 1 jalapeño sliced
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped fresh cilantro


Instructions

  1. Season the chicken with salt black pepper cumin chili powder and paprika on all sides. Place chicken into the slow cooker.
  2. Add onion green bell pepper jalapeño garlic and green chiles over the chicken. Pour in chicken broth and olive oil.
  3. Cover and cook on low for 5 to 6 hours or until chicken is very tender and easily shreddable.
  4. Shred the chicken using two forks directly in the slow cooker and stir well so it absorbs the sauce.
