Ingredients

  • 500g chuck beef, cut into chunks
  • 2 large onions, cut into wedges
  • 250g chestnut mushrooms, halved or quartered
  • 2 garlic cloves, minced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato purée
  • 300ml beef stock
  • 2 tsp cornflour mixed with 2 tbsp cold water


Instructions

  1. Slice the onions and prepare the mushrooms.
  2. Place onions at the bottom of the slow cooker and layer with mushrooms and beef chunks.
  3. Mix Worcestershire sauce, tomato purée, garlic, and beef stock. Pour over meat and vegetables.
  4. Cover and cook on low for 8 hours until beef is tender.
  5. 15 minutes before serving, stir in the cornflour slurry and cook uncovered to thicken the sauce.
  6. Stir gently and serve hot with your choice of side.

Notes

  • Optional: Brown the beef before slow cooking for deeper flavor.

  • Button mushrooms can be used instead of chestnut mushrooms.
