- 3 lb beef chuck roast
- 3 dried guajillo chilies
- 2 dried ancho chilies
- 2 chipotle peppers in adobo
- 3 cups beef broth
- 1 white onion chopped
- 4 cloves garlic
- 2 tbsp apple cider vinegar
- 1 tsp cumin
- 1 tsp dried oregano
- 1 tsp paprika
- 1 bay leaf
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- Corn tortillas
- Shredded cheese
- Fresh cilantro
- Lime wedges
Instructions
- Toast dried chilies lightly and blend with onion garlic spices vinegar and broth until smooth.
- Cut beef into large chunks and season lightly with salt.
- Add beef to slow cooker and pour blended sauce over it.
- Add bay leaf cover and cook on low for 8 hours.
- Remove beef shred it finely and return it to the consommé.
- Dip tortillas in broth fill with beef and cheese and cook until crisp if making tacos.
