- 1 cup apricot preserves
- 1/3 cup soy sauce
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Season the chicken thighs with salt black pepper and paprika on both sides. Heat olive oil in a skillet over medium heat and brown the chicken skin side down for about 4 to 5 minutes then flip and cook 2 minutes more. This step adds deep flavor.
- In a bowl whisk together apricot preserves soy sauce chicken broth garlic powder and onion powder until smooth. Taste and adjust seasoning if needed.
- Place the browned chicken into the slow cooker in a single layer. Pour the apricot sauce evenly over the chicken making sure each piece is coated well.
