Ingredients

  • 5-6 bell peppers
  • 1 pound ground beef
  • 1 can kidney beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • Green onions, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F. Cut tops off peppers and remove seeds.
  2. In a skillet, cook ground beef and onion until browned. Add garlic and cook 1 minute.
  3. Add tomato sauce, kidney beans, chili powder, cumin, salt, and pepper. Simmer 10-15 minutes.
  4. Fill each pepper with chili mixture. Place in a baking dish.
  5. Top with shredded cheese. Bake 25-30 minutes until peppers are tender and cheese is bubbly.
  6. Garnish with green onions before serving.
