Ingredients

  • 1 1/2 pounds chicken breast or thighs, chopped
  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 1 cup cashews
  • 1/4 cup soy sauce
  • 3 tablespoons hoisin sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Green onions, chopped (for garnish)
  • Sesame seeds, optional (for garnish)


Instructions

  1. Preheat oven to 425°F and line a sheet pan with parchment paper.
  2. In a bowl, whisk soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  3. Add chicken, bell peppers, and onion to a large bowl. Pour most of the sauce over and toss to coat.
  4. Spread chicken and veggies on the sheet pan in a single layer.
  5. Roast for 20-25 minutes until chicken is cooked and veggies are slightly charred.
  6. Add cashews during last 5 minutes of roasting to toast.
  7. Drizzle remaining sauce over the cooked dish. Garnish with green onions and sesame seeds before serving.

  • Add broccoli or snap peas for extra veggies.
  • Add sriracha for a spicy kick.
