Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cups chicken or vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Green onions and sour cream, for topping


Instructions

  1. Heat oil in a large pot. Add ground turkey and cook until browned, breaking it up as it cooks.
  2. Add onion and cook until softened. Stir in garlic and cook for 1 minute.
  3. Add sweet potatoes, chili powder, cumin, smoked paprika, salt, and pepper. Stir to coat.
  4. Pour in diced tomatoes, tomato paste, and broth. Bring to a simmer.
  5. Stir in black beans. Cover and simmer for 20-25 minutes until potatoes are tender.
  6. Adjust seasoning. Serve topped with green onions and sour cream.
