Ingredients
- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 2 cups chicken or vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- Green onions and sour cream, for topping
Instructions
- Heat oil in a large pot. Add ground turkey and cook until browned, breaking it up as it cooks.
- Add onion and cook until softened. Stir in garlic and cook for 1 minute.
- Add sweet potatoes, chili powder, cumin, smoked paprika, salt, and pepper. Stir to coat.
- Pour in diced tomatoes, tomato paste, and broth. Bring to a simmer.
- Stir in black beans. Cover and simmer for 20-25 minutes until potatoes are tender.
- Adjust seasoning. Serve topped with green onions and sour cream.
