Ingredients

  • 1 lb ground beef
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 12 corn tortillas
  • 2 tablespoons olive oil
  • Fresh cilantro chopped for garnish


Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a skillet, cook ground beef until browned.
  3. Add onion and garlic; cook until softened.
  4. Stir in chili powder, cumin, paprika, salt, and pepper; cook briefly. Remove from heat and let cool slightly.
  5. Warm tortillas in microwave for 20 seconds to soften.
  6. Add beef filling to each tortilla and roll tightly.
  7. Place seam-side down on a baking sheet and brush tops with olive oil.
  8. Bake 15-20 minutes until crispy and golden.
  9. Garnish with fresh cilantro before serving.
