  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 cups milk
  • 1 1/2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Heat a large pot over medium heat add olive oil and ground beef and cook until browned breaking it apart as it cooks.
  2. Add onion carrots and celery and cook for 5 minutes until softened.
  3. Stir in garlic and Italian seasoning and cook for 30 seconds.
  4. Pour in beef broth and milk bring to a gentle simmer then add macaroni and cook 10 minutes until tender.
  5. Lower heat stir in cheddar cheese until melted season with salt and pepper and rest 5 minutes before serving.
