- 1 lb Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tablespoons all purpose flour
- 3 cups chicken broth
- 1 cup heavy cream
- 12 oz farfalle pasta
- 1/2 cup sun dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
Instructions
- In a large skillet over medium heat cook 1 lb Italian sausage for 5 to 7 minutes breaking it apart until browned and fully cooked then drain excess grease if needed.
- Add 1 diced small onion and cook for 3 minutes until softened then stir in 3 minced garlic cloves and cook for 30 seconds.
- Sprinkle 2 tablespoons all purpose flour and 1 teaspoon Italian seasoning over the mixture and stir well to coat evenly.
- Slowly pour in 3 cups chicken broth while stirring then add 12 oz farfalle pasta making sure it is mostly submerged bring to a gentle simmer and cover.
- Cook for 12 to 15 minutes stirring occasionally until pasta is tender and liquid is mostly absorbed if needed add a splash of broth.
- Reduce heat and stir in 1 cup heavy cream 1 cup shredded mozzarella and 1/2 cup grated Parmesan until melted and smooth.
- Fold in 1/2 cup chopped sun dried tomatoes and 2 cups fresh spinach and cook 2 minutes until spinach wilts then season with salt and black pepper to taste and serve warm.
