Ingredients

  • 4 chicken thighs
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes
  • 3 cups chicken broth
  • 1½ cups orzo pasta
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Fresh basil
  • Parmesan cheese optional


Instructions

  1. Season 4 chicken thighs with salt and pepper then brown in 2 tbsp olive oil for 5 to 6 minutes per side and remove.
  2. Sauté 1 chopped onion in the same pot until soft then add 3 minced garlic cloves.
  3. Stir in 2 tbsp tomato paste and cook for 1 minute then add crushed tomatoes paprika and Italian seasoning.
  4. Pour in 3 cups chicken broth and stir in 1½ cups orzo pasta evenly.
  5. Return chicken to the pot cover and simmer for 15 to 18 minutes stirring occasionally.
  6. Cook until orzo is tender and sauce thickens Tips include adding extra broth if needed and stirring gently to prevent sticking.
