  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/3 cup sun dried tomatoes chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 3 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste


Instructions

  1. Season chicken with salt and pepper
  2. Heat olive oil in a skillet over medium heat and cook chicken 5 to 6 minutes per side until done then remove
  3. Add garlic and sun dried tomatoes cook 30 seconds
  4. Pour in chicken broth and heavy cream and simmer 3 to 4 minutes
  5. Add Italian seasoning red pepper flakes spinach and Parmesan and stir until smooth
  6. Return chicken to pan and simmer 3 minutes until coated
  7. Remove from heat and rest before serving
