Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 1 cup sweetened shredded coconut, toasted (for topping)


Instructions

  1. Preheat oven to 350°F. Grease and flour cake pan.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy.
  4. Add eggs one at a time, then add vanilla extract and mix well.
  5. Alternate adding flour mixture and milk, starting and ending with flour.
  6. Pour batter into prepared pan. Smooth the top.
  7. Bake for 30-35 minutes until toothpick comes out clean.
  8. Cool cake completely. Top with frosting or glaze and sprinkle toasted coconut.
