- 1 lb chicken breast cubed
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/3 cup sun dried tomatoes chopped
- 3 cloves garlic minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- Salt and black pepper to taste
Instructions
- Boil pasta in salted water until al dente about 10 minutes then drain and reserve 1/4 cup pasta water
- Heat olive oil in a large skillet over medium heat add chicken season with salt and pepper and cook 6 to 8 minutes until golden and cooked through then remove
- In the same skillet add garlic and sun dried tomatoes cook 30 seconds until fragrant
- Pour in chicken broth and heavy cream stir well and simmer 3 to 4 minutes until slightly thickened
- Add Parmesan cheese Italian seasoning and red pepper flakes stir until smooth
- Return chicken to the pan and simmer 2 minutes to absorb flavor
- Add cooked pasta toss to coat add pasta water if needed and cook 1 to 2 minutes then serve warm
