  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 2 tablespoons taco seasoning
  • 1 large bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1 jalapeño, sliced
  • 1/2 cup sliced black olives
  • 1/2 cup sour cream
  • 2 tablespoons chopped cilantro
  • 2 tablespoons sliced green onions
  • 1/2 cup salsa


Instructions

  1. Preheat oven to 375°F. In a large skillet over medium heat, cook 1 lb ground beef for 5 to 7 minutes, breaking it apart. Add diced onion and green bell pepper and cook 3 to 4 minutes until softened. Stir in 2 cloves minced garlic and cook 30 seconds.
  2. Add 2 tablespoons taco seasoning and 1/4 cup water. Stir well and simmer for 3 to 5 minutes until slightly thickened. Mix in drained black beans and cook 2 minutes more. Remove from heat.
  3. In a baking dish, spread half of the tortilla chips. Top with half of the beef mixture and 1 cup shredded cheddar cheese. Repeat layers with remaining chips, beef mixture, and cheese.
  4. Bake for 8 to 10 minutes until cheese is fully melted and bubbly. Watch carefully to prevent burning.
  5. Remove from oven and immediately top with cherry tomatoes, jalapeño slices, black olives, sour cream, cilantro, green onions, and salsa. Serve warm for best texture.
