  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/4 red onion

  • 1 cup chopped salami
  • 1 cup mozzarella pearls
  • 1 cup cooked chickpeas
  • 2 tbsp fresh parsley

Instructions

  1. Wash and dry romaine then chop into bite sized pieces and place in a large bowl.
  2. Halve tomatoes dice cucumber thinly slice red onion and add to the bowl.
  3. Chop salami into small pieces then add salami mozzarella chickpeas and pepperoncini.
  4. Whisk olive oil red wine vinegar Dijon mustard Italian seasoning salt and pepper until smooth.
  5. Pour dressing over salad toss gently until evenly coated and finish with parsley.
