  • 2 chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 cup quinoa
  • 2 cups water
  • 1 cup Greek yogurt
  • 1 cucumber grated
  • 2 tbsp fresh dill
  • 1 cup cherry tomatoes
  • 1/4 cup red onion
  • 1/3 cup kalamata olives
  • 1/2 cup arugula
  • 1/4 cup feta cheese


Instructions

  1. Marinate the chicken with olive oil garlic lemon juice oregano salt and pepper then rest for 30 minutes for best flavor.
  2. Rinse quinoa and cook with 2 cups water over medium heat for 15 minutes until fluffy then let rest and fluff.
  3. Mix Greek yogurt cucumber dill lemon juice and salt until smooth then chill to thicken.
  4. Cook chicken in a skillet over medium heat for 6 to 7 minutes per side until golden and fully cooked then rest and slice.
  5. Assemble bowls with arugula quinoa vegetables sliced chicken and drizzle with yogurt sauce for best results.
