Ingredients

  • 1 cup cherry tomatoes halved
  • 1 large cucumber sliced
  • 1/3 cup red onion thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese crumbled
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 2 tablespoons chopped parsley (optional)
  • Salt and pepper to taste


Instructions

  1. Slice the cucumber and red onion and halve the cherry tomatoes.
  2. In a large salad bowl combine the cucumber tomatoes onion and olives.
  3. Top with chunks of crumbled feta cheese.
  4. In a small bowl whisk olive oil red wine vinegar oregano salt and pepper.
  5. Drizzle dressing over the salad and toss gently to combine.
  6. Garnish with fresh parsley if desired and serve immediately.
