Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 2 cans black beans, drained and rinsed
  • 1 can diced tomatoes
  • 3 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Optional toppings: sour cream, green onions, avocado


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add sweet potatoes and stir to combine.
  4. Stir in black beans and diced tomatoes with juices.
  5. Add vegetable broth, chili powder, cumin, smoked paprika, salt, and pepper. Bring to a simmer.
  6. Cook for 25-30 minutes until sweet potatoes are tender.
  7. Stir in lime juice. Adjust seasoning as needed.
  8. Serve in bowls with desired toppings.
