Ingredients

  • 1 lb chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 bell peppers chopped
  • 3 cloves garlic minced
  • 1 can black beans drained
  • 1 cup corn kernels
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons taco seasoning
  • 1 tablespoon lime juice
  • Salt to taste


Instructions

  1. Heat olive oil in a large pot over medium heat then add onion and bell peppers and cook for 5 minutes until softened.
  2. Add garlic and taco seasoning and stir for 30 seconds to release the spices.
  3. Pour in diced tomatoes black beans corn and chicken broth then stir well.
  4. Add chicken breasts cover and simmer for 20 minutes until fully cooked.
  5. Remove chicken shred it return it to the pot and simmer 5 more minutes then add lime juice and salt to taste.
