Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium high heat. Add 1 1/2 pounds thinly sliced beef and sear for 2 to 3 minutes per side until browned but not fully cooked.
  2. In a bowl whisk together 1 cup beef broth, 1/4 cup soy sauce, 1 tablespoon brown sugar, 1 tablespoon cornstarch, 3 cloves minced garlic, and 1/2 teaspoon black pepper until smooth.
  3. Place 2 chopped green bell peppers, 1 chopped red bell pepper, and 1 chopped onion into the Crock Pot. Add the seared beef on top.
  4. Pour the sauce over the beef and vegetables ensuring everything is coated evenly.
