  • 1/2 cup sun-dried tomatoes
  • 2 cups spinach
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste


Instructions

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a skillet and sear chicken on both sides until golden brown. Remove and set aside.
  3. Sauté garlic in the same pan, then add sun-dried tomatoes and cook for 1 minute.
  4. Pour in heavy cream and stir in Parmesan cheese and herbs.
  5. Simmer sauce until slightly thickened.
  6. Add spinach and stir until wilted, then return chicken to the pan.
  7. Cook for another 5 minutes until chicken is done and coated in sauce.
