Instructions

  1. Heat 4 cups vegetable broth in a saucepan over low heat and keep it warm throughout cooking to ensure even absorption.
  2. In a large skillet, heat 2 tablespoons olive oil over medium heat. Add 1 finely chopped onion and cook for 3 to 4 minutes until translucent. Stir in 2 minced garlic cloves and cook for 30 seconds.

  4. Stir in 1 1/2 cups arborio rice and toast for 1 to 2 minutes, making sure each grain is coated with oil.
  5. Add 1 ladle about 1/2 cup of warm broth to the rice and stir continuously until mostly absorbed. Continue adding broth 1/2 cup at a time, stirring frequently for about 18 to 20 minutes until the rice is tender with a slight bite.
  6. Remove from heat and stir in 2 tablespoons butter and 1/2 cup grated Parmesan cheese. Adjust consistency with a small splash of broth if needed and garnish with 2 tablespoons chopped parsley before serving.
