- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic minced
- 1 small onion finely chopped
- 1/3 cup sun dried tomatoes chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt to taste
- Black pepper to taste
Instructions
- Season salmon with salt and black pepper. Heat olive oil in a skillet over medium heat and sear salmon for 3 to 4 minutes per side then remove and set aside.
- Add butter to the same skillet then cook onion for 3 minutes until soft. Add garlic and sun dried tomatoes and stir for 30 seconds.
