Instructions

  1. Preheat oven to 400°F. Toss 1 1/2 lbs halved baby red potatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon Italian seasoning. Spread on a lined baking sheet and roast for 25 to 30 minutes until golden and tender.
  2. Season 1 1/2 lbs cubed sirloin steak with remaining 1 tablespoon olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon Italian seasoning. Let sit at room temperature for 10 minutes.
  3. Heat a large skillet over medium high heat. Add steak cubes in a single layer and sear for 2 to 3 minutes per side until browned. Remove and set aside.
  4. Reduce heat to medium. Add 4 tablespoons unsalted butter and 4 minced garlic cloves. Cook for 1 minute until fragrant while stirring constantly.
  5. Return roasted potatoes and steak to skillet. Toss gently to coat in garlic butter and cook together for 2 to 3 minutes. Sprinkle with 2 tablespoons chopped parsley and 1/2 teaspoon red pepper flakes before serving.
