  • 4 slices bacon
  • 2 tbsp butter
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 3 tbsp flour
  • 3 cups chicken broth
  • 2 cups milk
  • 2 cups corn kernels
  • 2 cups potatoes diced
  • Salt to taste

Instructions

  1. Cook bacon in a large pot over medium heat until crisp then remove and set aside leaving fat in the pot
  2. Add butter onion carrots and celery and cook for 5 minutes until softened
  3. Stir in garlic and flour and cook for 1 minute while stirring constantly
  4. Slowly add chicken broth while stirring then pour in milk and mix until smooth
  5. Add potatoes and corn then simmer for 15 to 20 minutes until potatoes are tender
  6. Season with salt and pepper return bacon to the pot and simmer 5 more minutes before serving
