Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 small red onion diced
  • 1/2 cup black olives
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil chopped
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Cook pasta in salted boiling water until al dente, drain and rinse under cold water.
  2. Chop tomatoes, cucumbers, onion, and basil.
  3. In a bowl, whisk olive oil, red wine vinegar, salt, and pepper.
  4. Place pasta in a large bowl; add veggies, olives, and most Parmesan.
  5. Pour dressing over and toss until well combined.
  6. Top with extra Parmesan and basil before serving.

Notes

  • Let salad chill for at least an hour for best flavor.
  • Add feta or diced bell peppers for extra flavor.
