Ingredients

  • 3 lb beef chuck roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 3 cups beef broth
  • 4 carrots cut into chunks
  • 2 bay leaves
  • 3 sprigs fresh thyme
  • 2 tablespoons flour


Instructions

  1. Season beef chuck roast with salt and pepper on all sides.
  2. Heat olive oil in a Dutch oven over medium high heat and sear roast for 4 minutes per side until browned.
  3. Remove roast then sauté onion for 5 minutes add garlic and tomato paste and cook 1 minute.
  4. Stir in flour then slowly add beef broth scraping the pot then add bay leaves and thyme.
  5. Return roast and carrots cover and simmer on low for 3 hours until tender then shred and serve with gravy.

Notes

  • Let meat rest before shredding.
  • Simmer gravy uncovered if too thin.
  • Add broth if gravy thickens too much.
