  • 2 lb beef chuck cut into chunks
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 3 carrots sliced
  • 3 potatoes cubed
  • 2 celery stalks sliced
  • 2 bay leaves
  • 2 tablespoons flour


Instructions

  1. Season beef chunks with salt and pepper evenly.
  2. Heat olive oil in a Dutch oven and brown beef in batches for 4 minutes per side then remove.
  3. Sauté onion for 5 minutes then add garlic and tomato paste and cook 1 minute.
  4. Stir in flour then slowly add beef broth scraping the pot then add bay leaves.
  5. Return beef add carrots potatoes and celery then cover and simmer on low for 2 hours until tender.
