Ingredients

  • 2 cups long grain rice
  • 2 1/2 cups chicken broth
  • 1 1/2 lb chicken breast cubed
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 zucchini sliced
  • 1 cup cherry tomatoes
  • 1/2 red onion sliced
  • 1/2 cup tzatziki sauce
  • 1/3 cup crumbled feta


Instructions

  1. Preheat oven to 375 degrees and grease a baking dish.
  2. Add rice and chicken broth to the dish and stir evenly.
  3. Toss chicken with olive oil garlic oregano salt and pepper.
  4. Layer zucchini tomatoes and onion over the rice.
  5. Add seasoned chicken evenly on top.
  6. Cover tightly with foil and bake 45 minutes until rice is tender.
  7. Remove foil rest 10 minutes then top with feta and tzatziki before serving.
