Ingredients

  • 1 lb chicken thighs or breasts
  • 2 medium sweet potatoes cubed
  • 1 cup uncooked white rice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cucumber sliced
  • 1 avocado sliced
  • 1 tsp sesame seeds optional


Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper for easy cleanup.
  2. Toss sweet potato cubes with 1 tbsp olive oil half the salt pepper and paprika then spread evenly on the baking sheet.
  3. Rub chicken with remaining olive oil honey garlic powder paprika salt and pepper making sure it is fully coated.
  4. Place chicken on the baking sheet between the sweet potatoes leaving space for even roasting.
  5. Bake for 25 to 30 minutes flipping sweet potatoes halfway until chicken reaches 165°F internally and potatoes are tender.
  6. While roasting cook rice with 2 cups water bring to a boil then cover and simmer for 15 minutes until fluffy.
  7. Rest chicken for 5 minutes then slice into strips to keep it juicy.
  8. Assemble bowls with rice sweet potatoes chicken cucumber avocado and sesame seeds and drizzle with extra honey if desired.
