Ingredients

  • 5 cups fresh blueberries
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon ground cinnamon
  • 1 package pie crust dough (for top and bottom)
  • 1 egg (beaten, for egg wash)
  • Coarse sugar for sprinkling


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out half the pie dough and fit it into a 9-inch pie dish.
  3. In a large bowl, toss blueberries, sugar, cornstarch, lemon juice, zest, and cinnamon until coated.
  4. Pour filling into the crust and spread evenly.
  5. Roll out remaining dough and cut into 1/2-inch strips to create a lattice pattern on top.
  6. Tuck and crimp edges to seal.
  7. Brush lattice with egg wash and sprinkle coarse sugar on top.
  8. Place pie on a baking sheet and bake for 45–50 minutes until golden and bubbling.
  9. Cool completely on a wire rack before slicing.
