- 1 lb ground beef
- 1 cup white rice
- 2 cups water
- 1 cup black beans
- 1 cup corn kernels
- 1 cup cherry tomatoes
- 1 avocado
- 1 small red onion
- 2 tbsp olive oil
- 2 cloves garlic
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 lime
- 1/2 cup sour cream
- Fresh cilantro
Instructions
- Cook 1 cup white rice with 2 cups water and a pinch of salt over medium heat until tender then cover and keep warm.
- Heat 2 tbsp olive oil in a skillet then add 1 chopped red onion and 2 minced garlic cloves and cook for 2 minutes.
- Add 1 lb ground beef and cook until browned breaking it apart evenly.
- Season with 1 tsp chili powder 1 tsp cumin 1 tsp paprika salt and pepper and stir well then simmer for 3 minutes.
- Warm 1 cup black beans and 1 cup corn kernels in a pan or microwave.
