Ingredients

  • 3/4 cup granulated sugar

  • 2 large apples peeled and diced
  • 2 eggs

Instructions

  1. Preheat oven to 180C and line a muffin tin Tip make sure oven is fully heated before baking
  2. Mix flour baking powder salt and cinnamon in a bowl
  3. In another bowl whisk eggs sugar milk butter and vanilla until smooth
  4. Combine wet and dry ingredients gently without overmixing Tip stop once batter comes together
  5. Fold in diced apples evenly
  6. Prepare crumble by mixing flour brown sugar butter and cinnamon until crumbly
  7. Fill muffin cups 3/4 full and top with crumble generously
  8. Bake for 22 to 25 minutes until golden and a toothpick comes out clean Tip cool slightly before removing
